Two years ago I saw postings that one is unable to remove channels from the guide that I will never watch (all of the Spanish-language channels, for instance). Is that still true? I hate to think I have to go back to DirecTv to get this option.

Yes it is still true for all cable companies, Directv is the only provider that allows you to do that. All you can do on Comcasts system is make a favorite channel list.

This on-screen guide does show you all of the available channels that are in the channel lineup, not just the ones that you are subscribed to.
You are able to set up a list of Favorite Channels and use that as your on-screen guide.
In fact, you can set up multiple favorite lists for different people in your household or you can set up Favorites lists by genre (Movies, Sports, etc).
Here is how to set up a Favorites List: Using the silver Comcast remote control, press the Menu button twice, then select Setup, then Favorite List Setup. Select Set Up Favorite List and follow the on-screen instructions to add channels to your list. You can also name each list. After the Favorites List is created, you can access it and cycle through it by pressing the FAV button on the Comcast remote control (the FAV button is to the left of the channel up/down button).

In Directv it is really still a favorite list, it just allows you to set the default guide screen to a favorite list, subscribed channels, or a few other options. That way when you go to the guide, you see the channels you want to without having to go through additional steps. You can switch it back to all channels. Verizon allows this also. I'd assume the same is true of Dish. I think Comcast's lack of configurability is the exception, not the rule.
